What is a country? We generally think of a country as a political entity, including colonies as such. That's pretty much the definition I have used. Thus, Hong Kong is included because it was still a British colony when I was there in the '80s. Antarctica is a special case because, while many countries have claimed sections of it (and many of these claims actually overlap), none are recognized by any other countries. So I simply count the entire continent as one entry on my list. The Travelers' Century Club, an organization whose members have been to at least 100 countries, has a much looser definition that includes areas that are politically, geographically or ethnically separate from the main country. Their web site spells out the exact rules and lists the 317 "countries" that they recognize for membership purposes. By this definition, I can add the following to my list of countries visited:
